- Salt and pepper to taste

Instructions:
1. Preheat your BBQ grill or stovetop griddle pan to medium-high heat.
2. Rinse the eggplants and cut off the tops. Slice them into 1/2-inch thick rounds.
3. In a mixing bowl, whisk together the olive oil, balsamic vinegar, minced garlic, dried herbs, salt, and pepper.
4. Brush both sides of the eggplant slices with the marinade, ensuring they are well coated.
5. Place the eggplant slices on the preheated grill or griddle pan, and cook for about 4-5 minutes on each side, or until nicely charred and tender.
